STUFFED PEPPERS (Thanks Nat)

What you need:

4 green or red peppers

1 yellow onion (peeled and chopped)

2 cloves of garlic

1lb of ground turkey

1 can of diced tomatoes

oregano, ground or lemon pepper, chilis or chili powder

olive oil

Another quick and easy recipe with minimal materials for prep

bring a large pot of water to a boil-cut tops off peppers-remove seeds

add peppers to boiling water 3-5 minutes, drain and set to coll

preheat over to 350

heat olive oil and add chopped onion and garlic

add meat plus all the spices you want for flavouring-cook throughout

add tomato and mix well

drizzle olive oil in peppers

arrange cut side up in baking dish and stuff away!

bake for 10-20 minutes and enjoy!!!

PALEO STYLE BREADED CHICKEN (you can also use pork or fish)

One of the most frequent requests I get is to post recipes.  Here is one I made last night…

This one is simple, really they are all simple.  I am not that good in the kitchen but some of the recipes I’ve tried are amazing and easy to do so I will try and post as many as possible as I make them.

What you need:

2 eggs (Omega 3 enriched if possible)

Almond Meal (Ground almonds)

Boneless Chicken Breasts

Cayenne Pepper

Lemon Pepper

Chili Powder

All you need, very basic

 

NOTE: These are the spices I choose to use but feel free to add or come up with your own selection of spices, just keep the almond meal as the base.

Now that you have everything crack the eggs into a bowl and mix them.  This is what you will soak your chicken into to get the breading on.

In a dish, layer it with almond meal and add the seasoning.  I put equal amounts of lemon pepper and chili powder and less of the cayenne, but it you want more kick be generous with the cayenne.  I eyeball my stuff since cavemen did not have measuring cups and this one is quite simple. 

Freshly breaded and ready to bake

Mix all the ingredients together and then roll the chicken through it, or do it in a ziploc bag, whichever tickles your fancy.  Place the breasts on a baking sheet and put it in the over for 30 minutes at 350.  The chicken comes out super tender and juicy.
